This recipe is from Vincenzo’s Plate & David Berti. I tweaked it a tiny bit by adding shallots a parmigiano reggiano rind. Also make sure you start with a big enough pot! Recipe below ⬇️ Bolognese Sauce: Olive oil 1 medium onion 1 shallot (optional) 3 carrots 3 celery sticks 1/2 cup Red wine (Chianti) 1/2 after meat browns 1 lb ground veal 1 lb ground beef 1 lb ground pork shoulder Passata (24 oz. bottle) Tomato paste (6 oz. can) San Marzano Peeled tomatoes (28 oz. can) 1 liter of water Salt Pep
